Gyropalette [pronunciation: jyrow-pal-ette]
The gyropalate is a machine used to complete the process of remuage. Before this innovation in winemaking, the riddling process was only done by hand, which is a long, labor intensive process that takes up to 8 weeks to complete. The gyropalette automatically riddles yeast sediment from up to 504 bottles in as little as 7 days.
